Today, we all lead very busy lives and don’t have hours to spend in our kitchens baking cakes.

When I am pressed for time and need a nice dessert cake, I will reach for a box of chocolate cake mix. I don’t bake just plain cakes, I like to add things to them to make them ‘extra special’.

Cake Baking Tips:

1. Invest in a cake tester. You can pick up one for less than $6.00 at most kitchen stores.

2. Don’t over bake your cakes. I tend to remove my cakes from the oven 3-4 minutes before the recommended time because they will continue baking in the cake pan.

3. Don’t grease and flour your baking pans unless the recipe calls for it.

4. Always let your cakes cool before frosting them.

Here are some recipes that you can easily make from a box of cake mix.

Chocolate Surprise Cake

1 chocolate cake mix
3 oz. box of cherry flavored gelatin
1 c. boiling water
1 c. 7-Up soda
1 box instant pudding mix, any flavor
8 oz. tub of cool whip

Prepare chocolate cake according to package directions. When cool, poke holes on top of cake with a fork. Dissolve the cherry gelatin in boiling water and add the 7-up. Pour over cake. Whip together the instant pudding mix and milk. Fold in cool whip and use this to frost the cake.

Triple Chocolate Cake

1 box chocolate cake mix
1 3/4 c. milk
1 box instant chocolate pudding mix
2 eggs
12 oz. chocolate chips

Combine all ingredients, mix by hand until well blended for about 3 minutes. Pour into greased and floured bundt pan. Bake at 350 degrees for 55 minutes or until cake is done. Do not over bake! Cool and then remove from pan.

German Chocolate Thunder Cake

1 box German Chocolate cake mix
14 oz. can of sweetened condensed milk
1 jar hot fudge ice cream topping
16 oz. tub of cool whip
2 heath candy bars

Bake cake according to package instructions. Let cool for 35 minutes. Poke holes in cake with a fork. Pour sweetened condensed milk over cake and spread evenly. Wait for 5 minutes. Spread fudge topping over cake. Wait another 5 minutes. Spread cool whip over cake and sprinkle crushed candy bars over the top.

Turtle Chocolate Cake

1 German Chocolate cake mix
3/4 c. margarine
1/2 c. evaporated milk
14 oz. bag of caramels
1 c. chopped pecans
6 oz. chocolate chips

Mix cake according to directions. Pour half of the batter into 9 x 13″ pan. Bake at 350 for 20 minutes. Melt milk, margarine and caramels together. Pour over hot cake. Add pecans and chocolate chips on top of caramel mixture. Pour rest of batter over cake. Bake for 20 minutes, or until a toothpick inserted in the top layer comes out clean.

Impress your family and friends with this Chocolate Buttermilk Supreme Cake.  Chocoholics everywhere will love this layer cake with its orange-flavored cream cheese frosting topped with chocolate curls.  Impress ‘em with flavor and presentation!  You are sure to get rave reviews when you serve this cake.  It is also perfect for office luncheons, parties, dessert bars, church socials, pitch-ins, etc.

CHOCOLATE BUTTERMILK SUPREME CAKE

3/4 cup boiling water
3/4 cup unsweetened cocoa powder
1 cup buttermilk
2 1/2 cup all-purpose flour, unsifted
1 1/2 tsp baking soda
1/2 tsp baking powder
1/2 tsp salt
1 1/2 sticks butter, softened
2 cups sugar
4 eggs
1 1/2 tsp vanilla extract
Cream cheese frosting (recipe below)
Chocolate curls, optional

Preheat oven to 350 degrees. Grease and flour 3 9-inch round cake pans; set aside.

In a medium-size bowl, pour boiling water over the cocoa powder. Stir to dissolve the cocoa. Stir in the buttermilk after the mixture cools somewhat. Set aside.

Sift together the flour, baking soda, baking powder, and salt onto waxed paper.

In a large mixing bowl, beat together the butter and sugar with an electric mixer at medium speed until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in the vanilla. Beat the dry ingredients into mixture alternately with the cocoa mixture. Begin and end with the dry ingredients. Pour the batter evenly into the three pans. Bake at 350 degrees 25 minutes or until centers spring back when lightly touched. Remove from oven and cool on wire racks for 10 minutes. Remove cakes from pans onto the wire racks to cool completely.

When cakes are cool, place one layer on a cake plate. Spread top with a third of the frosting. Stack a second layer on top and frost with half the remaining frosting. Stack the third layer on the top and spread with remaining frosting. Top with chocolate curls, if desired.

FROSTING:

8 oz cream cheese
1 1/4 cups powdered sugar, divided
2 tbsp orange-flavored liqueur (or orange juice)
1/2 tsp vanilla
1 1/2 cups heavy cream

In a large bowl, with electric mixer at low speed, beat cream cheese to soften. Beat in 1/2 cup of the powdered sugar until smooth. Beat in the orange-flavored liqueur and vanilla. Beat in remaining powdered sugar. Add heavy cream and beat at high speed until stiff. Use as stated above to frost cake.

TO MAKE CHOCOLATE CURLS:

1 8-oz chocolate candy bar, room temperature

Draw a swivel-bladed vegetable peeler across the flat side of chocolate bar letting chocolate curl. Lift curls with a toothpick and place atop cake.

These are very good! They retained their soft and chewy texture even a couple of days after baking. Baking until the bottoms are brown but the centers are still soft makes for a nice moist cookie. Can a person have too many kisses?  Absolutely not!  Especially when they are chocolate kisses in a cake.  YUM!  For all you chocoholics out there; this cake is for you.  You think there is something funny going on here?  Two of the ingredients in this cake are kisses and dates!  Maybe you should make this cake for your sweetie!  Or how about Ooh La-La Chocolate Fudge Cake?  If you love chocolate, you will love these cake recipes.

CHOCOLATE CANDY KISSES DATE CAKE

1 cup boiling water
1 cup dates, cut-up
1 tsp baking soda
1 cup butter
1 cup sugar
1 tsp vanilla
4 eggs, beaten
2 1/2 cups all-purpose flour
1/4 tsp salt
40 chocolate candy kisses
1 cup chopped pecans

Preheat oven to 325 degrees. Lightly grease a 10-inch tube pan; set aside.

Combine the boiling water, dates, and baking soda together; set aside and allow to cool.

In a large mixing bowl, cream together the butter, sugar, and vanilla. Add the eggs and blend into the mixture. Sift flour and salt together; add alternately to the batter with the date mixture. Pour half the batter into the prepared tube pan. Sprinkle half of the nuts and half of the candy kisses. Add remaining batter and top with remaining nuts and kisses. Bake for 1 hour at 325 degrees. Cool 15 minutes before removing from pan.

OOH LA-LA HOT FUDGE CAKE

1 1/4 cups granulated sugar, divided
1 cup all-purpose flour
1/2 cup cocoa, divided
2 tsp baking powder
1/4 tsp salt
1/2 cup milk
1/3 cup butter, melted
1 1/2 tsp vanilla extract
1/2 cup packed brown sugar
1 1/4 cups hot water

Heat oven to 350 degrees.

In a medium bowl, combine 3/4 cup of the granulated sugar, the flour, 1/4 cup of the cocoa, the baking powder and salt. Add the milk, melted butter, and vanilla; beat until smooth. Pour mixture into an ungreased 9-inch square baking pan. Combine the remaining granulated sugar, brown sugar, and remaining cocoa. Sprinkle this mixture evenly over the butter mixture. Pour the hot water over the top but do not stir. Bake at 350 degrees for 35-40 minutes or until center is almost set. Let stand 15 minutes before serving. Spoon into dessert dishes, being sure to get sauce from bottom of pan and pour over the top. Garnish with whipped cream or ice cream topped with mini chocolate chips, if desired.

Chocoholics, listen up!  Here is a great recipe for you.  This old Hershey’s recipe for Cocoa Bundt Cake is fantastic.  And it’s great for any occasion from birthdays to parties to pitch-ins, the list goes on and on.  And here’s a holiday hint.  For Christmas, crush a candy cane and sprinkle over the top of the glaze to give the cake a pepperminty, holiday taste and look.

HERSHEY’S COCOA BUNDT CAKE

This recipe was in an old Hershey’s recipe give-away.

1 2/3 cups all-purpose flour
1 1/2 cups sugar
1/2 cup Hershey’s cocoa
1 1/2 tsp baking soda
1/2 tsp baking powder
1 tsp salt
2 eggs
1/2 cup shortening
1 1/2 cups buttermilk or sour milk*
1 tsp vanilla extract
Chocolate Glaze (recipe below)

Heat oven to 350 degrees. Generously grease and flour a 12-cup Bundt pan. In the large mixer bowl, blend flour, sugar, dodoa, baking soda, baking powder, and salt; add remaining ingredients except chocolate glaze. Beat on low speed for 1 minute, scraping bowl constantly. Beat on high speed for 3 minutes, scraping bowl occasionally. Pour batter into prepared Bundt pan. Bake for 50 to 55 minutes or until a wooden toothpick inserted in the center comes out clean. Cool 10 minutes; remove from pan and place on a wire rack to cool completely. Drizzle with the chocolate glaze.

Yield: 12 to 16 servings

*If you don’t have buttermilk, you can use 1 1/2 tablespoons vinegar plus milk to equal 1 1/2 cups. Allow to sit for a couple of minutes before using.

Chocolate Glaze:

1/4 cup sugar
1/4 cup water
1 cup Hershey’s Semi-Sweet Chocolate Chips or Mini-Chips

In a small saucepan, bring water and sugar to a rolling boil, stirring until the sugar is dissolved. Remove pan from heat. Immediately add the chocolate chips. Stir mixture with a wire whisk until the chips are melted and the mixture is smooth. Cool until slightly thickened. Drizzle over top of cake.

Note: For a pretty presentation, add a few chopped pecans around the top of the cake over the glaze.
